I was wondering what the requirements were for the follwoing... I know they may differ by state, but a general idea would be helpful =)

-Student teacher
-Teacher's assistant
are there any more opportunities to sit in on classrooms etc during early college years? and how would I go about doing that?

I was also wondering if you are given the choice as to where you would like go or if you're able to choose the teacher in which you'd like to be your mentor

For a teacher's assistant or aide, you do not need a degree, although it probably helps to have one.

I was a student teacher last semester (my last semester before graduating). At my school, you must have all coursework finished before you can student teach. We had other opportunities to go into the classroom via other classes. For example, I took a class my junior year about integrating technology into the classroom so we volunteered at a local elementary school in the computer lab for a few weeks.

There aren't as many classroom opportunities during early college years. You could ask your education department about opportunities to observe in a classroom, or you could contact the schools directly.

You could also consider substitute teaching. It won't give you a completely accurate view into teaching, but it will be experience at least.
