All of these "wonderful" southern values that people are writing about, I have not encountered in any Southerner.
Southerners are the strangest, nastiest, coldiest and most ignorant people I have met (and I have traveled quite a bit, both domestically and internationally).
I lost count the number of times I said "good morning" to a Southerner, only to be ignored or stared at like if I have 2 heads.
Seriously, Germans (who are "supposedly" cold and aloof) are way friendlier and more approachable than Southerners.
I'm Latino, by the way. Maybe it's that.

Southern Values today are what is commonly known as chivalry from the days of knights and castles.

Yes Maam and Yes sir, opening a door for a lady, removing your hat while enetering someone's home or a holy place, courting a female before taking her to bed, asking permission form a woman's father to date or marry his daughter.

These values help keep us pure and mindful of our elders. If you respect your elders this is a way of showing it, you lead by example.

They're a combination of English chivalry and indigenous( Five Tribes) ideals of working together. Proper manners are expected--and if you aren't well-mannered, you WILL be looked down upon. If someone is in need, you are obliged to help them without expecting a reward as well.

These may vary by social standing as well, but not too often.

i just recently moved from the north, and i can see that proper etiquette is still alive and well. children address adults with respect, males still open doors for you and so on.
