Do extras have scripted parts or do they just talk about anything with each other ( e.g. when the part calls for people to be conversating in the background) while the film is rolling?

Usually extras need to be QUIET. Extras never get scripts otherwise they would have to be paid proper actors rates. They should be pretending to talk. They can always dub on extra background babble later but they can't take it away.

The extras have to be quiet. They add sound later. It's just like in scenes where the actors are in a club or a bar and music is playing. On the set, there is no music playing at all. If there is a band, they are really not playing. The people dancing are dancing to silence. This is done so the mics can pick up the actor's voice and not the background noise.

When I was in high school, I had friends who were sisters and both were deaf but read lips extremely well.

One thing we used to do for fun was watch TV (esp. soaps) and movies and laugh at all the stupid or funny things the extras were "talking" about in the background. It is def. NOT scripted, but a lot of the time was really hilarious.

One time some girl sitting in a restaurant on a soap said, I hope they wrap this up soon, I gotta peeeee" ha ha ha
