Ok, for one thing in nwn2
under options > you can adjust the difficulty, if you cannot cope with the current monsters.
when you play through the game it's ideal to have Khelgar in your party, he takes down the NPC mobs easy, you need some strategy as well, when you start rolling attacks against NPCs try to stand in a doorway, to constrain them to fighting 1 on 1, with your weaker party members at the back and your fighters towards the front, only 1 or 2 enemies will be able to attack your character.
for character builds, you really should visit the nwn2 forums @ bioware, some feats give you advantage against mobs, such as cleave, great cleave, etc
if you do need to "sneak" past hostile NPCs , get a caster to cast invisibility on your fighters, and turn on stealth mode on your rogue characters, -> i don't see the point of doing this as you lose valuable experience points
And if you're in a MAJOR pickle can turn on DebugMode 1 <-- you must have a capital D and M, bring down the console with ~, the key next to 1
and givexp to your main character if you really can't do anything about it , though it's quite bad, as you'd kill anything too quickly
