There are two major power groups in Europe - Secularism and liberal Christianity. They co-exist in a relatively peaceful equilbirium. They are both worried about a major influx of a fundamentalist religion that is not part of traditional European culture i.e. Islam. The EEC is about free markets and open borders. So although Turkey, is a moderate, secular Islamic country today, could turn to become a fundamentalist Islamic state in the future or see a large influx of refugees of such people from it neighboring countries. If they spread across Europe they fear it could disrupt the cultural identity of the member countries.

Can you be more specific as to what these EU members might be? I fail to remember there was any significant concern mentioned about religion within the EU of late, except for the babble that went on for some time about a possible Turkey's adhesion, because they have a muslim majority there. Now democracy is not an issue I can figure out of hand. Monarchies can be democratic. A state is deemed democratic primarily if it has 2 houses for its Parliament, and to my knowledge, each EU member meets this requirement. So, what's your question about democracy being a EU religion, if I may?
