Land masses should be made with balls of rolled up newspaper, taped down and then covered with glue/water mix and strips of paper.
Paint then use sand/fake grass foam or static grass over a painted brown surface. Fill the water areas with resin and a small amount of pigment for the water after painting the water bed a light color. Be sure to use small stones as the usually rest at the botton of streams and most waters edges.
You can also use fake foam and twigs with multiple limbs to make trees.
If not you can use pipe cleaners twisted to make a trunk leave the top and bottom open for roots and branches.
For snow use a fine sand or gritty paint. Paint white and use gloss when appropriate.

Egypt:
Create temples with sugar cubes carve edges when done.
Hieroglyphics can be painted onto a wall of the cubes or just a sheet of paper splattered to look like sand stone.
Make the simple clothe robes out of cheap linen

China:
Use calligraphy pens/ reeds cut to an edge/ feather quills to make a Chinese scene showing the vast background and foreground with the focus on the middle ground and it's main characters/objects in the story.
Try to make characters/symbols on the page descending.
Make a temple out of clay/ and or cut folded and glued paper.

Incas:

each student can make one square or multiple in spread out areas.
Set up an Incan village out of sugar cubes or clay try and emphasize the symbiotic use of land by creating papier mache hill tops to work with.
Make an Incan rope bridge out of string and Popsicle sticks.

Mayans:
Create face masks or drawings of tribal leaders or dancers in outfits.
Make sugar cube temples.
Make glyphs for a temple to represent chareacters in a story or gods.
Use clay or card board to create a small mayan city.
Make Mayan masks.

Native Americans:
set up a native American village according to the tribe and their specific lay out. There are many different forms of these. Use fresh young twigs from a tree to make the curved sections on frames. Cover with paper or cloth. Or make out of clay.
Create a a story belt using native American tribal words to tell of a great event in the tribes past. Or to tell about their own lives.

Greece:
Greek Capitals out of clay pillars out of wooden dowels the rest can be made with foam wood card board or plastic card.
Make a toga out of cloth there are various ways to do this and you should look it up for a proper understanding.
Teach the children the method of measuring the face to create a picture using the anatomy. This is a technique greatly utilized and past onto master artists for generations to come.

This is an organization that sends ancient coins (sometimes for free) to schools. This allows the students to have a hands on experience. I believe they also send 'archaeological dig" projects for the kids to do.
