Cabo San Lucas is my favorite place in the world.
Here's the list:

Deep-sea fishing

Scuba

Snorkeling (though I don't think it's very good there)

SHOPPING!! Avoid the mall and hit the shops

Eating - La Concha Beach Club, The Office, El Pescador, Cabo
Wabo Cantina, Edith's (though I wasn't THAT impressed), Tortuga Azul...

Drinks - Margaritavilla (great tortilla chips & of course margaritas!), Cabo Wabo, (avoid The Giggling Marlin!), and of COURSE El Squid Roe

Golf - lots of great courses along the corridor to San Jose del Cabo.

Sunset cruise

lots more to do, you will discover...

As far as hotels, I prefer Solmar or Finisterra as they are close to town via a leisurely walk along the marina. If you don't mind a 15 minute drive into town, the Melia Cabo Real (not to be confused with the Melia San Lucas which is closer to town) is gorgeous! It is very close to La Concha, which is good, because the breakfast buffet is awesome at the Melia (and expensive), but the rest of the meals I ate there were horrible (and expensive). The Melia also has great golf courses.

If you go there in season, go see the whales. Its an amazing experience!
