Acid and alcohol fermentations. Often the acid fermentation referred to in basic biology classes is lactic acid fermentation, since this is a type that humans do (burning in muscle when exercising hard).

Both processes start with pyruvate (or pyruvic acid...look in your notes or text). Acid fermentation results in lactic acid or lactate while alcoholic fermentation results in ethanol and carbon dioxide.

The two types of fermentation are lactic acid fermentation and alcoholic fermentaion. As you can tell by their names the end product of lactic acid fermentation is lactic acid( which causes the burning sensation you experience in your mussels during excersise) and alcoholic fermentation that produces alcohol and carbon dioxide gas.
Fermentation occurs when there is a lack of oxygen(anaerobic). When there is oxygen(aerobic) resperation occours instead.
Both processes start with pyruvic acid.
Only yeast and other microorganisms go throught alcoholic fermentation(we don't)
