I have read reports that Corn, Soybeans & Hay in this order are the most profitable (marijuana being #4)
I also think that it is region specific...
For the Northwest...Apples, berries
For the Midwest...Corn, Beef (think of McDonald's - the largest buyer of beef)
For the Southeast...Oranges?
For Hawaii...Sugarcane and Pineapples
If you are in an area that cannot produce a specific item, than you cannot grow it. Coffee would not grow that well in Seattle. One other thing came to mind...Saffron...I think that it is the most expensive spice out there. Goes for around $600/lb

Fruit is worth a ton. Orchards make a bunch of money and therefore send a bunch of money on taking care of their fruit trees. Wheat and corn is not worth nearly as much per unit. Sure, a lot of it is produced, however, its rather cheap.
Where I live is in a Fruit belt and orchard owners will do anything to keep their fruit beautiful, every one that doesn't wind up sold is a large loss to them.

Specialty items used in fine restaurants obtain the most money for your investment and per pound. For instance, Exotic and specialized mushrooms can sell for upwards of $200 lb.
