They can if they become worn. I had some Zip-lock containers that I had to throw out after a while because they had rough white spots on the inside.

Plastic gas particles are absorbed by most foods that are stored inside. When you eat the food, you are ingesting the particles. Whether this, over one's lifetime, adds up to serious consequences is up for debate.

You can read Dr. Andrew Weil books and he will caution you to use plastic containers that are transparent instead of opaque to decrease the absorption.

The state of chemistry and materials science has really improved, so that most items we use produce minimal toxins. That does not mean that, over a lifetime, one does not have health effects from all the man-made chemicals we absorb.
