Being honest, sincere, and seeming like you actually want to help the customer. Do what it takes to get them what the need (within reason of course!) Example: I had a guy want to return a card that supplied minutes to his prepaid phone. Store policy did not allow this without a manager's approval. There was no manager around, so I told the guy I will try to put the minutes on his phone, and if it still didn't work, I would give him his money back and take whatever crap the manager gave me. He seemed satisfied with that, and when I put the code in, it worked for me. He was extremely happy.

Providing excellent customer service is to meet all the customers' expectation and then some. To provide such a service requires dedication, commitment and a severe belief in the maxim that "the customer is always right".
