Depending on your taste, I would recommend:

FullMetal Alchemist--Two young men set out to fix a horrible mistake they made in their past--while trying to resurrect their mother. A mix of drama, comedy and science fiction, it is an amazing 50 epsiodes.

Naruto--A ninja story that is much more than it seems. Our young protagonist has a deep secret--involving a 9-tailed fox demon and the 4th Hokage (leader) of his village. Naruto is comedy and action-packed. With a large group of characters, Naruto is well over 150 episodes at this point and will be restarting in Japan with new eps soon!

Fruits Basket--The story of Torhu Honda, a young optimistic girl, who happens to live with the Sohma family--who has a deep, dark secret. Light hearted with a touch of seriousness, Fruits Basket is a nice Shojo anime.

Gundam Seed/ Gundam Seed Destiny--The latest installment in the ever-popular Gundam series, both tell the story of Kira and Athrun, two young men who are both Coordinators (aka genetically engineered people, who are incredibly intelligent and "better" than regular people) but who have made different choices in life. Gundam Seed is the tale of Kira and Athrun learning how to deal with their differences. Gundam Seed Destiny explores the dark secret of how the Coordinators came to be.

Noir--The story of Mirelle, an assassin-for-hire and Kiraka, the young girl who made a sudden appearance in Mirelle's life--with the promise she could unlock the secret behind the brutal murders of Mirelle's parents. Drama and action-packed--and everything ties together in an errie way.

Well, good luck, I hope you find something to enjoy!

It depends on your taste. If you like action-packed, killing-off-hoards-of-demons kind of stuff, then Saiyuki is an awesome one. If you like comedies, then I recommend Comic Party and Ra-i. If you like cartoons that are music-oriented, try Othello, Nana, Beck, or Gravitation. (If shounen-ai or yaoi isn't your thing, though, don't go with Gravitation!!!) For angst and drama - especially romance-oriented stuff - Angel Sanctuary and Under the Glass Moon are great. (Although Angel Sanctuary is kind of graphic...not to mention it's the kind of movie where you'll understand it better if you watch it twice...)
For stuff that's got a little bit of everything - action, drama, romance, comedy...the whole nine yards - try D.N.Angel. It's kind of shoujo-ish without having a fluff overkill.
Hope this was helpful!
