do a web search for "budget hotels in france" and "budget hotels in spain".
In France there are several chains - Formule 1 / B&B / Campanile / ... lots more, all round the country. They are close to most major towns and cities, usually close to a motorway exit too.
We like B&B because they have rooms that sleep 4 when we travel with the kids, and the self-service breakfasts are usually good value if you get down reasonably early (€5 and you can go back for seconds/thirds/...)
Most of the budget hotels are in the industrial part of town, because they were thought up for the long distance lorry drivers after they had made their journey, so usually not much to see close by, but there's usually a good value eatery close by too for your evening meal.
We now live near Limoges, it's on the A20 motorway you'll probably use to drive down to Spain. It is a good day's drive from Calais if you get a very early ferry, but avoid the Paris Peripherique on a Friday afternoon.

Not sure about Spain, never driven there, but " parador" is a type of government-approved guest houses you could try searching on too.

I use and found clean, very cheap and easy to find around France and Spain is the chain Formula 1 Motels . I booked and paid for them online last time I drove to Malaga. My route was Calias to Le Mans Next day to Barritz Next day to Madrid Then next to Malaga, but I must admit that last leg is a long one and we arrived in the early hours

Ps you can make more stops than we did in France with F1 but they are scarce in Spain

If the funds will run to it use overnight ferry from Portsmouth to Caen then a good days drive will clear France to arrive Spanish border at Irun early evening. budget hotel at first exit after border (sorry dont know the name but its directly on the roundabout).

Second night should take you about 250K south of Madrid, lots of hotels at side of motorway I've paid from €12 nr Bailen to €50 at Santa Cruz.

Should then be a leisurely drive to arrive Malaga by lunchtime

F1 in France is low cost but OK. Campomile chain is much better and there is one quite close to the Spanish Border (north). From there it's a trek to Madrid (avoid rush hour nightmare). After that there are several hotels & restaurants en route. If you are visiting Andalucia (Granada & South) buy the ANDALUCIA ROUGH GUIDE at about GBP 12.99. Lots of info, hotels, prices and town maps.

Formule 1 are cheap Campanile and Ibis are a little more pricey they all have website you can book online
