if springwater stays underground and is filtered throu rocks why is there a sell by date on the bottle?

Once it has been bottled it is no longer on the move through the natural filtering system and can probably start to go stagnant so the sell-by date would be a semi-safe limit of time to drink the water by.

It is one of the latest human invention for convenience. you are force to buy, to consume quickly,and to throw away while years later still perfect condition

Because it is not in it's natural environment no! Once you put it in a bottle, it will degrade.
