Graphic Cards drive the graphics and video displays on your monitor. By taking over this task from your CPU and by haveing a large amount of dedicated memory they can process a lot of video information very quickly.

The result is that you get sharper, much more detailed images and smooth (vs. jerky) flow on the display.

Obviously, the better the card the better your display. Some games are so complex that they require a significant graphics card to even run. Others simply dumb down the output for less capable cards.
