MLK is definitely easiest, but Annie Oakley or Winston Churchill would be different and more interesting. You could have some fun with Annie Oakley and the musical Annie Get Your Gun.

First of all - how long will the paper be? If you pick MLK or Churchill, there is a lot of material on them and you will need to narrow it down to part of their life, or your research paper will be like a Wikipedia entry (which isn't bad, but not very thorough); somewhat glossed over.
My suggestion is Annie Oakely, she lead a very interesting life and met some very colorful people. She was a crack shot and in the days when women didn't really make a name for themselves - she did. You can not only get into her life, you could put in little tidbits (like how her hair turned prematurely white) and how she would fit in with today's world.
Teachers love it when you take a research project to heart and really look at the character's life, not just citing when they were born, where they went to school and their life's achievements, but presenting the subject as someone you *care* about.
Also, don't limit your research to the internet. It is a great place to start and you may find references to books which you can find in your local library. Start out with the standard google search for her and then take it from there.
I'm sure you will do great regardless of whom you pick.

I'd choose Martin Luther King because he is very influential and has changed the world for the better.

I'd recommend
