and I just realized a heckva lot of people consistantly and overwhelmingly say "um" or "uh" while they talk.

Its so annoying and just appears like they are unschooled. But everyone does it....

Is this just an English thing, or do people in other languages speak like this?

I've heard Nelson Mandell make statements and speeches and he is very smooth. If I recall correctly, he just slightly paused without this um/uh crap.

Over the next several days, try to stop yourself saying uh/um. Impossible!

very good question. apparently its only the native english speakers do this. its when your brain freezes for a nano second while you speak. then when you continue to speak it comes to you. or people just want to pass the time

I noticed that when I was fourteen or so. (You would also be surprised how many people interject random 'like's into the pauses in their conversations.) Anyhow, I don't say 'uh' or 'um' anymore. Good post, I'm giving you a star. ;)
