I would like to go back to school, but with a 3 year old..its hard..has anyone done it and are they legitimate?

Some are, and some are not. Even some that are accredited aren't smiled upon by employers, so you are right to be cautious.

In general, you'll do best attending an online college that's attached to a real, reputable, brick-and-mortar university. So a few examples that you can start with include:

UMass Amherst
U Maryland
U Nebraska
U Iowa
U Colorado
Rensselaer Polytechnic
Carnegie Mellon

In fact, check the websites of the schools local to you. Check those of your local community colleges, and your local state schools. Some of these schools offer online degrees, and having the campus nearby could be useful if you need extra help. If it's a state school or cc, it may also be a lot cheaper than taking an online degree from a private or an out-of-state school.

Only those approved by the U.S. Department of Education. That should be evident on the college's website or you could ask them.
