I am purchasing a 2002 toyota mr2 spyder, I test drove this vehicle and I brought it back to the dealership and steam was coming from the engine (back end) and while driving the temp spiked and heat would blow hot then cold... any ideas - obviously not purchasing this particular vehicle but I would like to know why that happened so I can check out if this is an issue with other spyders. There is a coolant leak somewhere. Could be a head gasket (the worst) or something simple like a leaking hose.

It sounds like a blown head gasket. That allows water to enter the piston which when the gas ignites is then turned to steam and a cloud or steam is produced, over time the stem will increase. It could also have a warped head which will cause the head gasket to lose it's seal same thing really.
Don't buy a car that smokes or steams.

Either the cooling fans did not come on or there is an air bubble in the coolant lines from the engine to the radiator. This latter condition is common when mechanics drain the coolant and refill it without knowing how to bleed the air out of the cooling system.
