When some one says ,"yeah that is the latest thing that has happened to me," isn't that technically saying the thing that has happened to me fartherest back in time? And "most recent" would be the closet word to right now?

Incorrect. Idioms don't have to literally describe what they mean. Most of them don't even make grammatical sense.

"latest" means the last thing happening chronologically, so as close as possible on the time continuum. Therefore it would mean the same thing as most recent.
