I wonder if when "catch and release" fisherman bring a fish up to unhook him and take his photo, is the fish struggling to "breathe" the whole time, like we would be if you held us under water?

Actually they arent holding there breath, they dont really have a choice, in the water the fishes gills absorb the oxygen already in the water, but in the air the oxygen cant be absorbed because its not small enough to be absorbed in the gills so yes they are basically struggling for oxygen (kinda like a smoker with emphazema trying to walk up alot of stairs) after about 5 minutes out of water they will slow down greatly, but it really varies sometimes we had fish out of water for longer than 10 minutes and we still threw them back but it took longer for them to get out of that state of shock, so you kinda have to pull the fishes tail back and forth in the water so it moves fresh water threw it's gills to revitalize it.

They will be fine for a little while, but it's good to put them back soon; they really are built for breathing in water.

After putting them back in the water it is good to support them and give them a little break (but make sure that water is running past the gills, because that's how the gills work). As far as the fish is concerned, he just wore himself out fighting against being caught, so he is tired.

No they don't. Actually, they breath faster as they do not get enough oxygen. Their breath patten is diffirent with human being.

they go in to shock, i know that much, also if you what to re lest one you need to hold it for 1min so it will wake up. because if you let it jest go it will die in 10mins i hear it on t,v, on a fishing show.
