Linux's minimum system requirements are very low but for efficient running and also keeping in mind Windows OS use, you should opt for system that can fullfill the requirements of Microsoft's OS, than it will automatically can run any linux os.
There are lots of flavour but u can go for RedHat, Fedora, Mandriva(My best choice), SuSeLinux(My second best choice). Make sure u choosing 2007v of these OS. This version coming with XGL interface(A open competition with Windows Vista).

The minimum HDD size is set by the OS. Windows Vista requires about 15 GB at least, XP around 5 GB. So you could use it. However, if you have the money get a nice 500 or 640 GB drive they only cost about $60 and if you have the money to buy an e8600 you shouldn't have a problem with that. The other important thing is an old drive will actually slow down an otherwise fast computer, newer hard drives not only have more space but are also much faster at accessing data. For RAM minimum is 1 GB but you need at least 2 GB for windows vista. Again, 4 GB of DDR 2 @ 800 MHz is only $50 you should have no problem spending that much. This keeps increasing because of competition, manufactuers have to keep making bigger models to outsell the competition, when you have more space the software is allowed to grow as well and they sort of work with each other. Don't forget its also cheaper as well.
