at first i thought it was when she was happy, she would turn into a young woman again, but when there were bombs falling on the hat shop, she's young again and i don't think she's happy then.

It shows that when she's thinking of Howl, she turns younger because she's in love with him, and love makes her younger. It's all a metaphor, really.

She was breaking the spell.

She had nearly broken it before the hat shop was bombed. When it was, plus the added stress of Howl putting himself in danger, she was able to find the strength in her to fight and therefore breaking the spell entirely.

Yeah I didn't really get that either, might have to watch it again... but it's so looooooooooooong I don't know if I have the stamina. Good movie though : )
