Up until the advent of synthetic processes all strings for stringed instruments were made from Sheep Gut. Although often called cat-gut strings they weren't ever made from cats.*
Also I would think many 'armoured' animals would provide an intersting variant on body-armour.

you can use the bones for piano keys. small holes in the bone will take in sweat from the fingers.
