In most jurisdictions the first step is a 3 day pay or quit notice. After that, the landlord usually has to file an unlawful detainer action in order to evict the tenant if the tenant wont or cant go voluntarily. What that is is a proceeding where the landlord states his case why the tenant should go, and the tenant states his case why he should get to stay. The order is called a
writ of ejectment, and after it issues the tenant has 5 days to go.
The best resources are the Code of Civil Procedure, and some parts of the Civil Code.
