I will say that Marriottt is the best chain. You can find many different rates of hotels, Marriot as a huge company has many internal chains. This means that you can rent an apartment in Marriott Vacation Club or rent a big suite on JW Marriotttt. To conclude Marriot has a global presence all over the world, even in the Himalayas, so you can get whatever you want with good prices and get a Marriot Reward card that will give you nice benefits. If you are looking for a controversial and interesting place go to Dubai, I've been there and I think that It is amazing.

Ritz Carlton, Four Seasons, Mandarin Oriental. In London, Savoy Group.
Ritz is part of Marriott BTW.
Typically there are local hotels that are not chains that are the best hotels in a given market...
London has the Lanesbourough, Dorchester, etc.
Paris has La Crillion, Meurice and the Plaza Athenee.
