Papillon for quality of writing (true-life or otherwise), acting, photography and sheer emotional scale.

Shawshank has popular appeal and will be remembered far longer.

Papillion certainly had its thrills; also, there was the education factor of learning how prisoners then hid certain things. Never a dull moment.

For for sheer quality of writing and depth of character, you can't beat Shawshank. It will live on past Papillion.

FYI - Much of the 'facts' as presented in Papillion were later debunked by a team of disinterested investigators who concluded that much of his writing was 'fiction'.
