You can be fired any time. You can quit without giving 2 weeks notice, but the bad reputation will follow you over to your future jobs. Some people may not even employ you if they know you have a reputation of quiting without notice because it shows how unreliable you are as an employee.

However, when you work under a contract, then your contract will have certain terms and conditions that both parties have to meet and follow. It is very easy to sue by either party, if one of you breaches the work contract/agreements because it is easier to contest or discuss in a court of law as it exists on paper. Also, you can sue your boss if they fired you for something that breaks the law e.g if you are fired for being physically challenged, even if you have proven to your boss that you can perform your job.

No, you can't sue someone for firing you. There is no law requiring someone to give you notice that they will fire you. If there are circumstances regarding the firing that are illegal (fired you because of age, race, religion, sexual preference, physical disability) then file a claim with the Equal Employment Opportunity Office in your area or the department of labor.

Most states are "at will employment" states, so the employment is at will. You are your employer can terminate your employment at anytime. If you were fired unjustly, you can file for an unemployment claim. If your boss did something, like hit you when he terminated you, you could press charges for your damages due to the hit, but not due to the termination.
