In scientific terms it means the substances that are gases at ordinary temperatures such as hydrogen, helium, water, ammonia, carbon dioxide and methane.
But could also mean readily vaporizable at a relatively low temperature Or flying or having the power to fly

In chemical terms, volatile means that a chemical in liquid form will turn to gas readily. Such as all organic compounds.

I don't agree w/ the other answers...it means in it's normal state this substance is "stable" but when mixed w/ other substances, sudden movement, or stored incorrectly it becomes volatile...meaning "unstable" at the slightest disturbance.
