the predator in the movies (predator, predator 2, alien vs. predator, etc) have these weird dreadlock like things. what are they? are they really dreadlocks?

There's no getting around it. Dreadlocks are cool, man.
I think with Predator, though, they are going for a masculine look of Medusa and doing a pretty good job of it, too.
I don't have a clue as to what they actually are made of. Best to ask a prosthetics/costume director.

If I remember correctly, according to (at least) one of the Alien vs Predator novels, It is part of an initiation ritual for when the Preds enter "Warriorhood" (for lack of a better word)
