My husband and I are looking to raise a baby chicken for a pet... where would I buy a single baby chicken near/in Western North Carolina?

Buy an IWANNA paper at your local grocery store or gas station. They have a section about farm animals.

Purchase an Iwanna at a gas station or something for 1 dollar (no tax) and look in the "from the farm" section. Usually you can find chicks for about $3 apiece. Also, I would suggest buying at least one more to keep it company and to keep eachother warm on these cold nights we've been having!

Feed stores have baby chicks, but usually not till February-ish I think. You could put an ad in a local paper. There's lots of people with small flocks... maybe someone will have a chick for you. You could post an ad on the bulletin board at the local feed stores too (all of ours have ad boards people can use).

You may want to contact a local animal shelter. The last time I visited my local shelter here in central NC, there were baby chicks available. You may have better luck shortly after Easter when the shelter receives baby chicks from families who purchase them as "gifts" for children and, unfortunately, quickly tire of them.
