How does electric hot pot work? please explain all..

I'm also not very sure what an electric hot pot is , but I'm pretty sure that almost anyting that its electric and produce heat use some kind of resistor to achieve it. From irons , toasters or electric stoves .

The resistor is an element that doesn't allow well the transit of electric current .Electrons require more energy to go trough this weak conductor. the result of this is radiated heat .

Built in thermostat monitors temperature of liquid. Turns on heating element when needed.

If you are making shabu-shabu or Chinese Hot Pot, best to heat broth a bit and add to electric hot pot. Let broth simmer a while in hot pot before adding meat, veggies, etc. Add in small amounts to allow temperature to come back up.

Heating element has resistance to flow of electrons through it. Produces heat. Heat is conducted through the pot to the water.

Voila, hot water!

Mine will slow boil liquids with the lid on. With the lid off it looses heat too fast.
