it depends on your budget as they said before
those are the hotels i usuly suggest:
Riad Mogador Agdal: 5 stars (no alcohool)
Riad Mogador Opera: 4 stars(no alcohool)
Atlas Asni: 4stars
Atlas medina & spa: 5stars
Riad sebban(excellent traditional house managed as a host house: around 120 euros/night)
Riad Les Clefs du Sud (traditional host house around 110 euros)

check any of the local Riads (guest houses). The service is excellent, and the price very competitive vs. regular hotels.
