It can vary so much culture to culture.It depends greatly on folklore and the mythology of a particular era. Also its social and geographical position in the world.
Some ancient cultures,such as the ancient Egyptians made many of their indigenous animals Gods.
Watching them in nature, inspired a respect for the animal or birds abilities of survival and reproduction.
The list of any one culture,even our modern society would be to long to even try and give a general list.
Try doing a Google using key words such as,animal Gods,animals and birds and their cultural meanings, ancient cultures and animal worship.Phrases such as this.
You could begin with American Indians,animal and bird lore.
It should be a very interesting quest. You will very likely find out some amazing things, and gain a lot of knowledge along the way.

Some animals are luckier than humans, some are not. Most animals don't have a long life expectancy, so they don't live long. Maybe you could be a monkey. Animals do work, dogs work, horses work too. Animals do have to learn things. Maybe they don't go to school, but they have to learn how to survive their environment, how to eat and how to find shelter. Food does not magically fall in front of them. They also have to find water and keep from getting killed by other animals. Some animals are beaten and abused, lack food and water, don't have shelter from bad weather. Some die in the snow and freeze to death, or die in the heat. I think you should remain a human and not turn into an animal. Animals don't get to go to the mall every weekend either. Animals don't get to go on trips with their friends, or go to the market with their grandmother.

It depends on the culture you're asking about. In Native American spirituality animals have various meanings depending on which peoples you ask... in various other cultures such animals weren't known to them or had other meanings. You're going to have to research according to culture.

crows are gatherers of souls. when someone is dieing crows are often seen at the windows waiting for the soul to be released.
