Prefrontal cortex, visual cortex, auditory cortex, motor cortex, and sensory cortex. That covers basic senses, motor control, and reasoning skills. I would deliberately avoid the amygdala, which controls fear, and hope the creature's reasoning skills would compensate.

Actually, the original Dr Frankenstein in the book didn't reuse human brains at all--he was a chemist, and he created life from scratch through chemical processes. But, given the ground rules of your questions, and no real definition of what constitutes a part, I would have to say that all of the 9 functions listed below are pretty much essential:

1) gross motor skills (walking, etc)
2) fine motor skills (manipulating a pencil, setting a watch, etc)
3) memory
4) compassion
5) communication (written and spoken language)
6) emotion
7) logic
8) learning
9) appreciation for beauty

I would just substitute a natural sponge. Brains are not much use anyhow.
