Also, if you google for a partilcuar player, you might find playerdatabase, which covers all professional athletes (I am just not sure of what the website name is at this time though).

I have several sites for you. First, to specifically answer your question (tackles and sacks) you can use yahoo stats to see these:
http://sports.yahoo.com/nfl/stats/
Their stats only go back to 2001.....To see tackles and sacks, you can do that by TEAM or you can also Sort by position/player.
A site that has sacks (but not tackles YET) for all the years is :
http://www.jt-sw.com/football/pro/stats.nsf
You just click on a year, then click sacks.
Keep in mind: The NFL have only been tracking sacks since 1982! (Before 1982 there was no such stat as a sack, Ofiicially)

Nfl.com/stats also has tackles and sacks since 2003.....and should/probably will keep updating their website.

For right now, they dont have defensive stats (except maybe team stats) but I think they are adding defensive stats so keep checking back there...it is a GREAT site for offensive stats though as well as team information ( records, etc...).
Sorry theres not a better answer for you, for current players its pretty easy to find their tackles and sacks even for past years...but for past players it is a little more tricky. If there is a particular player who youre looking for stats for, let me know if you can't find it! I'd be glad to help.
Pro Football reference just added all of the defense and kicker and line positions, so the stats are coming SOON!!!! Once that happens, that is the ONLY site you will need for NFL stats!

bruce smith is the all time record holder in sacks, but couldn't find an all time leader in tackles
