Martin Amis just published a new novel, and he writes in all sorts of genres - Graham Greene is one of my favorites; his classics explore the empitness of the modern soul, but he also wrote spy novels that he called "entertainments." Perhaps the greatest living multi-genre-ist (a new word) is John Updike: novelist, poet, short story writer, art critic, literary critic. Alice Walker has written some nice poetry along with her novels and short stories. TC Boyle just never stops writing.
Oh, and I think that guy, what's his name, oh yeah, Shakespeare wrote world class poetry as well as plays.

As far as I know authors don't usually do that. When they publish books in different genres, they use pen names. There might be a few ones I don't know of that have published in different genres under the same name, but I can't help you with that. Sorry. "Some authors find that their work sells better if they have a different pen name for each genre. If you have built a reputation for writing standard detective fiction and you now want to put out a fantasy detective novel, loyal readers may smear the new book because it disturbs their expectations. Readers of detective fiction don't normally like fantasy elements mixed in, so in this case you need to attract a new audience from the fantasy community without the burden of your prior readers giving the new book a bad name."

Isaac Asimov was the first writer to have a book in every category of the Dewey Decimal system. I bet he qualifies. He even wrote fiction (well, science fiction).
Carl Sagan also wrote fiction and non-fiction, both extremely successful. Cosmos and Contact are both written by him.
