Yes. This is a somewhat common solution for badly cracked plaster walls. Obviously, the screws will be a bit longer than typical installations.

You can. I wouldn't. If you choose to you should investigate where the lathe is, and/or any substrate beneath the plaster. Possibly even studs beneath that? To screw into " just " plaster will be a problem at some point. I also would not use contractor adhesive to install drywall.

Sheetrock or drywall as it is commonly referred to can be placed over plaster wall. however: if you remove the plaster and lathing strips you can see the layout of the walls interior and eliminate the surprises that frequently occur, such as split studs or mistakes that take the room out of square. you also have the opportunity to reinsolate and caulk if one or more walls is an outside wall. also you can easily upgrade or add electric facilities and run other utilities inside the walls such as phone lines, tv coaxial cable, and stereo wires. doing work of this nature on top of other work is usually a quick fix and i would not recommend it.

Sounds like a good way to get mold in the walls.

Yes you can. Make sure nails or screws go thru to solid wood and use glue.
