For one of my classes, the main project is to get into groups of 15 and plan, organize and run an event. Keep in mind this isn't like highschool where you organanize a dance and hope people come.

By successful did you mean profitable?

You could plan a chili-cookoff or a dessert cookoff. There could be a small entry fee and then charge admission to get into the event. Each participant could taste all the entries and vote. A trophy or small cash prize could be given to the winner.

Okay- here is an easy one. A movie festival. You could easily find (okay easily if you are in the right areas) small indy film makers that would love to have their work shown- and perhaps even get them to speak. Show a few different movies of different genres- have some Q&A.

You should have access to the chairs and space- perhaps even a digital projector- if not- you could rent one reasonably.

I guarantee- your own Sundance could be very cool.
