I'm not going to say Final Fantasy because that is what most will do. But Xenosaga series is great, along with Shadow Heart series. Those two are grand and are very entertaining.

Valkyrie Profile 2: Silmeria is probably the best rpg you are going to get as of right now. It breaks away from conventional rpg's, and gives you a whole new concept of how to battle.
A normal rpg would consist of turn based play. VP2 breaks away from that and gives you a 3D fighting sequence, with turn based elements.
Amazing rpg, and a long game which keeps you wanting to play.
It's a great game to start into the series. If you want the first Valkyrie Profile for the PS1, you will have to shell out about 250 bucks. It is the most rare and most highly rated PS1 game out there.

The FF series is probably the best known. I'd also recomend Shin megami, Disgea or the .hack series.
Disgaea is really a cult classic it has excellent plot and voice acting (you can pick either english or Japanese with subs). It is similar to the stratagey fighting that you see in Final Fantasy Tactics where you move your characters around the area. Easily one of the best games I've played with multiple endings and being able to carry over your files each time.
Shin Megami Tensei: This was really good. It's kinda like Final Fantasy meets Monster rancher/pokemon. Great music story and battle system. Basically the world ends and you've become a deamon. You can recruit/create new demons to join you in your fight. Multiple endings with a gotta catch em all feel to it. I highly recomend this one.
.hack I wasn't too crazy about but it was a good play. The story is decent and the system itself is pretty fun to play. My only complaint is being unable to control your teamates but that really plays into the story line so it can't be helped.
FFX- Nice story, nice graphics for a console (PC games will always be better so it's rather pointless to talk about graphics), many flaws in the sphere and battle systems.
FFVII/ FFVIII: Very nice to play even though they're PS1 games. VII is the most famous and is really good overall. VIII had the a great story and soundtrack but the junction system was really flawed. You could beat the game and never lvl past lv10 if you knew how.
While I haven't played them, I've heard great things about Valkrie profile and Breath of Fire series.

Besides the Final Fantasy series, I would have to say, Xenosaga was fun. Some people (not me) like to put Kingdom Hearts in the rpg category, so those 2 are fun as well.
X-men Legends and Marvel Alliace were a lot of fun to play multiplayer.
