What do you like?
For nature, Norway, Sweden, Iceland, Finland, Latvia are excellent spots.
Culture would lead you to the main cities, you could try Budapest, Amsterdam, Krakow, Vienna.
Some spots tend to attract people looking forward to party, Prague, Barcelona, Tallinn.
Maybe you can let your budget decide, see which low cost airlines still have tickets available and base your decision upon that.

I think, given the time you have, a city break would probably be best. I suggest somewhere like Istanbul because there is lots to see. Its culturally very different and so the experience more vivid and memorable. It is warmer than northern Europe and relatively cheap.
