Goldfish in particular...

I had goldies for years and it's extremely hard to tell the sex of the fish. If you can ever see them from the bottom, look at the spot where their back fins attach to their bodies. The space should be triangular in shape. If the triangle is large, it's a female. If it's small, you have a male. You could always wait until spring...the females' bellies swell in the spring time b/c that is the onset of spawning season. Problem with this method is if you have a young goldfish and she's not mature yet, she won't swell.
Color is not a sure-fire way of telling the sex, unfortunately. Their color varies a lot based on what they eat, the amount of artificial/natural light they receive, the temperature of the water, etc.

Goldifsh are nearly impossible to tell, and only can be told during breeding season, this is how:

males develop breeding tubercles (white pimples) on the gill covers and on the leading edge of the pectoral fins
females develop a deeper body as they fill with roe (eggs), and have a larger vent (just before the anal fin) than the males

usually you can tell by their little fin under them if it is a female it shouldn't be that big, but if you have two and ones is biggher it is usually the male, or if you cant tell that way it is the colors males are always brighter then the girls. Like the chines fighting fish their back fins are way different. The males are big and woshy and the girls are short and stubby, I hope this helped you out at all.
