I'm playing Flo on the Go, and when I get to level 8 or 9, I keep struggling getting my goal even though I am not losing any tables, I come up about 1,000 points shy of my goal. I passed level 8 after 3 tries, and no luck on level 9 after 2 tries.

try making lots of chains. taking orders, serving, cleaning, ect

at the end of your shift keep all of the plates on the tables and then pick them up and throw them away at the same time and you get points for that for doing it.
