Every park (except Animal Kingdom) has a very good nighttime show.
At Magic kingdom its the Wishes fireworks show with a gorgeous spectromagic parade.
At MGM there is Fantasmic! which I think is fantastic. Its amazing. Its like a light, laser, water show type thing and its awesome.
At EPCOT there is illuminations which is an elaborate fireworks display.
Downtown Disney is really fun. There's the market place side where its like Disney shops and family friendly restaurants (rainforest cafe, etc.)
Then there's what they call west side which is a little more grown up. There's a huge AMC theater, Virgin Megastore, Disney Quest, Bongos cuban cafe, Planet Hollywood, House of Blues, Cirque du Soleil.
But, in between Marketplace and West side is what they call pleasure island and thats really where all the adults go. Its like an area of night clubs. There's pretty much a night club for each category/interest.
Some examples are BET soundstage, The Adventurers Club, 8 trax (70s and 80s club), mannequins dance palace, the comedy warehouse, and motion, just to name a few.
Head over to the Boardwalk also for nighttime entertainment. There's the Atlantic Dance Hall - Get into the groove at this elegant nightclub that plays host to a variety of hot sounds. Be there after the sun goes down when the club comes alive with a DJ Dance Party, featuring all your favorite music. The beautiful art deco interior is topped with a twinkling ceiling of stars that shines down on the expansive dance floor.
Also on the Boardwalk is jellyrolls which is a dueling piano place. And of course there is also the ESPN sports bar on the boardwalk.
Have a magical time!

Here are just a few of my favorite adult activities at the Walt Disney World Resort:

1. Dance the night away at Disney's Pleasure Island! Visit over 7 clubs, including my favorite, The Comedy Club. You'll laugh at the great improv performers! Manequins - with its revolving dance floor, is pretty awesome too.

2. See Cirque De Soleil, La Nuba show at Downtown Disney. This live show will amaze you!

3. Drive over to The Magic Kingdom anytime after 8pm (there will be no parking attendants there that late and you'll park for free). Board one of the ferry boats at the Transportation and Ticket Center 30 minutes prior to the Wishes fireworks show. Head up to the 2nd level to enjoy a great boat ride and front row seats for the fireworks. When its over, simply take the ferry back to your car! A fun activity at Disney that is truly Free! :)

4. Head over to Universal's City Walk to enjoy good food, great shopping, and even a few clubs!

5. Make reservations for Disney's Spirit of Aloha Dinner Show at the Polynesian Resort! Its is wonderful and is not to be missed!

There are lots of clubs, bars, and shopping at Downtown Disney. If you are staying at the Disney resort, you don't even have to worry about driving.

CityWalk at Universal is much of the same. Disney has Wolfgang Puck, Universal has Emeril, Disney has House of Blues, Universal has Hard Rock Cafe. I did really love the Jamaican food at Bob Marley's at Universal CityWalk.

Both places have comedy clubs as well.

Have fun!
