Sorry, no humor here. As I'm from Ohio's cheese country --TIGHTLY wrap in #1 or smaller chunks (the amounts you'll be needing), freeze up to three months. Will lose some quality, but will still be good.
I always keep blue cheese in freezer as makes it easy to scrap on to salads.
Putting cheese chunk in freezer for a few minutes makes it easier to shred.
