Lots of reasons, probably. One would be that we have tended to detach ourselves from nature and view ourselves as separate from the natural world. We spend time hooked into human creations and it is, therefore, easy to devalue nature. We forget that we are animals and part of the natural world; we operate on the assumption that whatever serves the immediate human need is what is most desirable, not taking into consideration long-term effects of our actions, or denying the role of humans entirely. We dismiss responsibility by believing that one person can't make a difference. So, from a psychological standpoint, we are like an abusive partner - putting our own needs first, blaming the victim and refusing to acknowledge the consequences of our actions.

First of all, many people DO care about the natural world.
But most people don't see the connection between living in harmony with the planet and their own needs. They forget where our food comes from. They forget that THIS IS THE AIR WE BREATHE and THIS IS THE WATER WE DRINK and THIS IS THE FOOD WE EAT.
With all the problems and challenges of life, many have forgotten how to notice and appreciate the beauty of this home planet of ours.
One of the reasons many people don't is because of a conflict between what they can gain from a process that hurts nature and the value of conserving or protecting nature. For example, many corporations stand to earn billions of dollars using business models that harm the environment.
Another is that the concept of living in harmony with nature isn't a major part of most religions. It's not in the 10 commandments, and Jesus never affirmed it. In addition, most religions put such a high value on "the next life" - where you go when you die - that valuing what happens on Earth doesn't seem as important. As if "things of this world" are "material" and unseemly in the eyes of God.
With science and technology we have learned how to do marvelous things, but many of these things harm nature. We have only begun to learn how to do these things so that we nurture the natural world at the same time...a new concept for humanity.
