I'm wanting to get one added on my 2002 GMC Envoy, but wanted to know if it'll actually show an improvement on handling or not.

Yes. It will under hard cornering. specially on high profile vehicles like yours.

When cornering to right (i.e.) The left side of the suspension will compress under the weight of the vehicle, The anti-sway bar forces the right part of the suspension up as well, leveling the vehicle. Like having a big hand pressing the whole suv down at the rear.

It will improve the handling, but the biggest improvement you could make is to get a larger front sway bar. My dad put front and rear sway bars on his 72 Blazer, and it made a world of difference, especially when pulling a trailer.
