Hancocks has a free projects page and a free book available in stores, called working with fleece. They can make scarfs and hats with little to no sewing. Also they have new sew felt craft projects. Joanns and Michaels also have free projects online. Check it out you probably should look in the sections for you kids. Most elderly have arthritis so check for something from easy to moderate. If you group is limber and interested make a quilt or knit pot holders. Crochet is good. For the guys acrylic paint projects could be done with wood and/or plaster of paris.

My aunt was in a nursing home and they liked stenciling stuff. They made pics and decorated carry bags. They even made t-shirts. My Aunt made my mom a sweater with big tulip flowers on it. It was really pretty. She loved making it and my mom loves wearing it.
I was looking at acmoore.com last night for kid stuff. If you look in the kid section there are some really cool things that any age can make. And the kid section is usually small amount of work. Just cause they are older does not mean that they don't like cute things. Or maybe you could have them make holders for their glasses or something useful like that.
It's nice to see that somebody cares about the elderly. Good for you.

You might want to check out this page at my website:
http://glassattic.com/polymer/disabilities.htm
(... click on the category called "Seniors, Assisted Living, Stroke, etc."...)
My whole site is mostly about polymer clay, but many of the suggestions on that page of the site could apply to any crafts, and there are also some good links to other sites that could be helpful too.
Best of luck!!!!!!!!!!!!!!

At the nursing home I worked for, we did decoupage, free painting, stenciling, make seasonal cards, ornaments, have them make stuff for a craft sale. Take writing pens and take fake flowers use floral tape and tape flower to pens. You can even let them do coloring pages. Ask them what they would like to do.

Not sure, but keep in mind that the elderly are more likely to suffer from dexterity and vision limitations, so don't pick something that requires extraordinary hand/eye coordination.
