Do do consider steryotypes like Italians are mobsters or Irish are heavy drinkers, whites can't dance, jews are cheap, blacks always have fancy rims etc. to be racist. I think it is all in good humour.

I don't think that stereotypes are necessarily racist, but they can be hurtful and can get in the way of really getting to know someone from a different group, especially by people who have little experience with people from a different background.
Relying on stereotypes limits you and those you stereotype, and if you let the stereotype stop you from getting to know someone, then you never know if there is any reality to the stereotype, what it is based on.
I happen to be Italian, and my family has never had any history of involvement with mobsters at all, and I would not have any idea where to find a mobster!! That is just a stupid, stupid stereotype.
Those little nuggets of truth can be nuggets of falsehood, or no longer true, or blown completely out of proportion.
Saying that all people from a group are the same way is just plain nuts.
All Italians are not mobsters, some whites can dance, blacks don't always have fancy rims, and not all old Chinese in San Francisco sit around playing mah jongg.
Yes, there is a behavior of a significant portion of a group that does do something, but extending that to everyone of the group is prejudging, and gets in the way of knowing someone.

racial stereotypes, and the problems

1. not all Italians are Sicilian. the image of the Italian mobster comes from Southern Italian immigrants anyway, and completely ignores other Italians, even if it's true.

2. well hell, that's like also mentioning most Irish are catholic. not much i can say about that.

3. the image of whites not being able to dance is simply weird, given that dance is such a huge part of many traditional white cultures. (including ballet, etc). now saying many American whites just can't seem to catch onto a tribal rhythm is different

4. not all Jews are ashkenazi. in fact, most aren't, so it isn't fair to judge them all on this small group.

5. blacks liking rims isn't even a country wide thing- you see it more in the south than anywhere else (I'd never seen rims, nor a sooped up Chevy until i moved ot the south). so that's not fair either.

so pretty much, if you're going to use stereotypes, you'd have to get them right first of all, and secondly, it's only a problem if you apply them to individuals

edit: but we do need to lighten up and be able to joke around with each other. that's in part what made the 70s so great

No, I don't find them to be racist. I find them to be true. And keep in mind, I'm 100% italian. Stereotypes were developed based on repetitive behaviours by certain social groups/races. You don't hear the asians have fancy rims or that people from Spain can't dance or that jews are mobsters. Why not? Because the behaviour doesn't exist. Stereotypes ARE true. But people are so quick to call it "judging". If they would keep an open mind, they would see that it's true. Am I a mobster? No. But my Sicilian uncles were questionable. Can I dance? Absolutely. But I've partied alot and I gotta tell ya, whites really can not dance.

I dont think its racists by assuming those things sometimes because you just cant help it, but I think its racists when you treat people differently based on those things.

that's a good question, I think it depends on how each individual from that group looks at it.
