The endolymph contained in three semicircular canals have to impinge on the ampulla in three different axes X Y Z to give a sense of balance and equilibrium. They are statoreceptors.If there is any problem with one of the canals the person cannot have his head erect.

For hearing, direction and fluid balance...
The outer ear is filled with air as well as the middle ear and the inner ear is filled with fluid.
The cochlea contains three chambers filled with fluid. The vibrations from sounds spread through the fluid and stimulate tiny hair folicles in the organ of corti the air cells then change the vibrations into nerve impulses which then travel along the auditory nerve to your brain which catagorizes and understands them as different sounds.
The Cupula, the Utricle and the Sacule (spelling?) are the vestibular system... It is for maintaining balance and the macula tells your brain which way your head is turning to help the brain maintain balance and interpret sounds, where they are coming from and catagorizing what their source is...
What the importance of three is, Im not certain? I can't remember if each one of them is for a specific function or not? I would imagine so though because that is the reason you have two ears and why they are where they are... One ear notices sound from different directions faster than the other depending on where it came from... Ears are fascinating arent they? God is a genius!

The part in our inner ear is called the vestibular system and deals with balance and orientation of our bodies. The 3 semicircular canal deals with rotation in each of the 3D plane- horizontal, anterior and posterior and are roughly at 90 degrees to each other. We need 3 to cover all 3 dimensions.

this helps in maintaining the balance in air pressure between two sides of the ear drum,thus,allows it to vibrate freely when sound waves strike it. there are 3 small bones or ear ossicles called malleus(hammer shaped) , incus (anvil shaped) , and stapes(stirrup like)
